The Elsom Cellars Spring Release is right around the corner! We invite all Corks on the Loose members and their guests to join us for a tasting and wine club pick up April 30th – May 2nd. We will be open all weekend long, with special hours on May 1st as we celebrate the Kentucky Derby.
2016 Isabella | Red Mountain
Named after Jody Elsomʼs daughter, our latest vintage of the Isabella grips you right away with itʼs perfumy fragrance. Earning 93 points at SavorNW, the 2016 Isabella takes after its award-winning predecessors with notes of cranberry, molasses, blackberry compote, and cherry. This is a beautiful representation of Washington Bordeaux-style wine.
2016 Logan | Columbia Valley
Taking the name of Jodyʼs son, the 2016 Logan is once again reflective of his spicy, charismatic personality. This wine is big and juicy with hints of ripe plum, lavender, and vanilla. It is wild like the growth of brambleberry bushes, and warm like a cup of mulled wine by the fire. This Malbec heavy red captured 91 points at SavorNW.
2020 Albariño | Yakima Valley
Our inaugural Albariño will take you on a tropical journey from the second it hits your glass. Elements of citrus, green apple, and assorted tropical fruits and flora make this the perfect pairing with a seared Mahi Mahi dish. Thanks to the thick skins on theAlbariño grape and the higher acidity, this wine is ready to drink now or save for later.
Special Guest – The Pickled Chef
Born and raised in Tacoma, Washington, Chef Mahogany Wiliams is a true Pacific Northwest native. She graduated from the Seattle Academy of Culinary Arts in 2017 with a specialty in savory foods, and later went on to work closely with James Beard Award winner Tamara Murphy at her principal Capitol Hill establishment, Terra Plata. The three years she spent in Murphy’s kitchen allowed Mahogany to hone her skills as a modern chef, and ignited her passion for upscale farm-to-table northwest cuisine.
In 2017, Mahogany lived and worked in New Orleans, immersing herself in a variety of creole and international cooking practices. Notably, she held stints in icons such as Gabrielle, Bywater American Bistro and Saba.
Further exploring her own culinary voice, Mahogany recently returned from an extended cultural research excursion in Europe. There, she spent months traversing Spain’s Basque Country, the Tuscany region of Italy, and the French Riviera, learning time-honored preparation methods from local artisans. The vibrant people, traditions and ingredients she encountered left a lasting impression on both her approach to cooking and her overall outlook on life.
Today, Chef Mahogany aims to blend the flavors of her travels with the homestyle cooking she grew up eating. Inspired by the soul food classics her mother and grandmother served, her philosophy centers on offering fresh, hand-crafted meals that honor her cultural roots and reflect the fluid landscape of the New American identity.
